Tallow typically refers to beef fat that has been rendered over an extended period. It is made by slowly heating the fat at a low temperature until it melts. We use cod fat or suet, which is found around the kidneys and loins of the cow. Cod fat is much purer than external fat.
After a couple of hours, all the fat would have dissolved, leaving you with a mixture of liquid and solids. It is then strained traditionally using a cheesecloth to separate the gristle and hard bits that have not rendered down. The golden liquid is what we call tallow.
At room temperature, it solidifies into a yellow sort of butter. I find that its texture is comparable to ghee. It has a mild beefy flavour that is not overpowering or sickening. It can be used for cooking, frying, or skincare. It’s completely natural and does not contain anything harmful.
Tallow is very heat-stable and can withstand high temperatures without becoming toxic to humans. It’s high in saturated fats, which, by the way, are beneficial to humans. It’s also rich in fat-soluble vitamins like A, D, E, and K.
Before seed oils became popular, animal fats were always used in the kitchen. Other cultures may use sheep’s fat, which is also great but tends to have a stronger taste that some might not find appealing.
